Will's Goats Cheese Sausage Rolls

We have been assured from Will that his sausage roll recipe makes for a 'God tier' snack and can be made in batches and frozen before or after cooking, plus you have the option to enjoy hot or cold. You can really experiment with the filling replacing the onion chutney and goat's cheese for spicy tomato chutney and chorizo or even HP fruity sauce and black pudding - the variations are endless.

Ingredients
1 pack of Jus-Rol puff pastry (or make your own batch here)
400g of sausages or sausage meat (match the flavour to your mood)
1 pack goats cheese (150-200g)
Half a jar of caramelised onion chutney (or make your own recipe here)
Juice of 1 small lemon
1 egg to glaze (or use milk)
1 healthy tablespoon of wholegrain mustard
1 teaspoon of the extra special secret ingredient (this can only be found in Hull and is an anagram of 'a crisp mechanic pie')

Method

  1. Take out the pastry from the fridge and set aside.
  2. Remove skin from sausages and using a fork mix together sausage meat, chutney, lemon juice and the mustard and the secret ingredient (Chuck in a couple of tablespoons of flour if your lemon is particularly juicy)
  3. Keeping your pastry on the parchment paper, dust your rolling pin and roll out the pastry slightly on the longest side (this will make it easier when constructing the roll)
  4. Cut the pastry in half on the long edge and add in half of the mixture (wet your hands to make it easier to handle the mixture), use a wet knife to cut your goat's cheese and drop half onto the mixture.
  5. Egg wash around the edge of the pastry and roll the pastry around the meat & cheese, the egg wash will act as the glue to hold the roll together but you can press down the edges for extra peace of mind.
  6. Cut the foot-long roll into portions to your suiting, ensuring you make some slits in the top of the rolls which will allow moisture to escape during cooking.
  7. Place the rolls onto the parchment paper and onto a roasting tray, ensuring they are spaced out well.
  8. Cook for 25-35 minutes at 180 or until golden brown, rotate trays to ensure an even bake or cook one tray at a time.
