Easter biscuits

There is nothing better than a biscuit and a brew and we've got the perfect sweet treat recipe that'll do just the trick.

These easter biscuits bring together currents and spice and all things nice to create a totally indulgent sugary treat.

Made in just 4 simple steps it’s time to get ready to start baking.

What'll you need

100g unsalted butter
100g golden caster sugar
1 egg
½ tsp ground cinnamon
1 tsp mixed spice
Zest of one lemon
Zest of one orange
75g currants
200g plain flour
2 tbsp milk
1 tbsp golden granulated sugar

Ready steady bake

  1. Heat the oven to 200C/fan 180C/gas 6. Line two baking sheets with baking parchment.

  2. Beat the butter and sugar together until pale and fluffy. Add the egg yolk, mix again until well combined, then stir in the spices, zests, currants, flour and milk to make a stiff dough.

  3. Roll the mixture out between two sheets of parchment, until about 5mm thick. Remove the top layer of parchment, then use a cookie cutter, about 7cm wide, to cut out shapes from the dough. Transfer to the prepared trays.

  4. Whisk the egg white with a fork until lightly foamy, then brush over the tops of the biscuits. Sprinkle over some sugar and bake for 10-15 minutes. Cool on the trays, before transferring to an airtight container.
