As the temperature rises, we don't want to be stuck sweating it over the cooker for hours! We want light and fresh summer meals to keep us cool.
We love to make summer tarts because they are super simple (yes we do cheat and buy ready-rolled puff pastry) and you can have this made and in the oven in literally minutes – just add a salad.
It’s so tasty; we promise it tastes as good as it looks, and is great for using up veg that you might have around.
It really is as easy as 1,2,3…
- If you fancy a cheat like us, grab yourself a sheet of ready-rolled puff pastry – make a little indentation around a 1/2 inch from the edge.
- Then pick your ingredients - we love green pesto and goats cheese. Spread on your pesto and top with goats cheese.
- Egg wash the edges then bake in the oven until the pastry is cooked through and the goat cheese melted and golden. Once the tart is a little cooler top with rocket and toasted pine nuts.
